Bumbu Bali on Jalan Pratama in Tanjung Benoa is one of the best-known places to learn Balinese cooking. Founded by chef Heinz von Holzen, an authority on Balinese cuisine, the restaurant serves traditional dishes in a garden setting of thatched pavilions, and its cooking school teaches the spice pastes (base genep), sambals, satay and slow-cooked dishes that underpin the island's food.
Classes have traditionally begun with a visit to a local market, where the kitchen team shops for produce and fish each day, before moving to the school's kitchen for hands-on cooking and a shared meal of what you have made. In the evening the restaurant's rijsttafel, a spread of many small Balinese dishes, is the classic order.
The restaurant opens for dinner daily 18:00–21:30, according to its Google listing, where it has well over a thousand reviews. Class schedules and prices are not kept up to date online, so contact Bumbu Bali directly by phone to check the current timetable and book a place.
Peak season runs July to August and over Christmas: the best villas and beach-club beds book out early.
