Seed is a French-Asian, farm-to-table restaurant a short walk from Bingin Beach. Chef Simon, who previously ran his own restaurant in the French Alps, builds the menu around the Seed Garden behind the kitchen, which grows around fifty varieties of herbs and edible flowers. Pastry, ice cream, ferments and sauces are made in house, seafood comes from the Jimbaran landing and some meats are finished over bamboo smoke.
The day starts with croissants and breakfast plates such as corn fritters or raw-fish avocado toast. In the evening you eat at long wooden tables under string lights, choosing from dishes like laksa-broth gyoza, beef rendang or the market fish, with a separate Nusantara menu of Indonesian flavours. Vegetarians are well catered for, and the bar mixes arak punches and cocktails.
Seed is open daily from 7am to 11pm, with happy hour from 4pm to 7pm and dinner from 4pm. It also runs cooking classes. Reservations can be made through the website, which is wise for dinner in high season.
Peak season runs July to August and over Christmas: the best villas and beach-club beds book out early.
